2 Tbsp. (30mL) Mrs. Dash® Original Blend
3 cups (720mL) peeled and shredded potatoes
3/4 cup (180mL) egg substitute
3 Tbsp. (45mL) 2% milk
4 Tbsp. (60mL) reduced fat Dairy sour cream
2 Tbsp. (30mL) grated Parmesan cheese

Recipe
1. Combine potatoes, egg substitute, milk and Mrs. Dash® Original Blend in medium bowl; mix well.
2. Spray non-stick skillet with cooking spray.
3. To form pancakes, place approximately 1/4 cup (60mL) potato mixture into skillet; press with spatula to about 4 inches (10cm) in diameter.
4. Cook over medium heat 4 to 5 minutes on each side until golden brown.
5. Repeat with remaining potato mixture.
6. Top with sour cream and sprinkle with cheese
