    Emeril's Buttermilk Fried Chicken

    List of Ingredients


    • 1/4c. salt
    • 1/4c. Essence (listed under seasonings)
    • 2T. sugar
    • 1 qt. buttermilk
    • 1 whole chicken cut up
    • 2c. flour
    • peanut oil for frying


    Instructions


    1. Combine salt, 1/4c. Essence and sugar in plastic container.

    2. Add buttermilk and stir to dissolve salt and sugar. Cover and refrigerate up to 24 hours.

    3. Combine flour and remaining Essence. Shake to combine. Heat oil to 375.

    4. Remove chicken and coat in flour. Fry in batches about 8 mins.

    5. Turn, fry about 8 mins.
