    List of Ingredients


    • 2 1/2 to 3 lb. chicken
    • 2 cloves garlic, quartered
    • 1/4c. oil
    • 1T. lime juice
    • 1t. dried tarragon
    • 1t. dried chervil
    • 1/2t. dried thyme
    • pepper


    Instructions


    1. Preheat oven to 375. Lift skin from chicken breast and place 6 pieces garlic between skin and meat.
    2. Cut slit in each drumstick. Insert a piece of garlic into each slit.
    3. Blend oil and lime juice in small bowl. Brush on chicken. Mix tarragon, chervil and thyme in another small bowl.
    4. Rub onto chicken. Sprinkle chicken with pepper. Place chicken, breast side up, in roasting pan.
    5. Bake at 375 for 1 1/4 to 1 1/2 hours, or until juices run clear and meat near bone is no longer pink, brushing with lime juice mixture several times.
    6. Let stand 10 minutes before carving.
    7. Makes: 4 servings.
