Monterey Chicken

6 boneless, skinless chicken breasts
1 large green pepper
1 large red onion
½ pound fresh mushrooms
½ pound monterey jack cheese
oil
salt, pepper
This is best done over the grill but, it can be done in a skillet.
Slice vegetables into chunky pieces. Toss together and coat with oil, salt & pepper.
Place chicken on grill (or in skillet) and arrange vegetables around the chicken.
When vegetables are soft and chicken is no longer pink, remove from heat.
To assemble for serving:
Take 1 chicken breast and lay 1 - 2 pieces of each vegetable on top. Lay a thin slice of cheese on top. Microwave 15 sec or so, until the cheese is melted and serve.
