Tangy Barbecued Pork Ribs

List of Ingredients
- 3 lb. pork loin back ribs, cut into serving size pieces
- 2c. water
- 1/3c. packed brown sugar
- 1 clove garlic, minced
- 1t. dry mustard
- 1/4t. pepper
- 1 (8 oz) can tomato sauce
- 1/3c. water
- 3T. vinegar
Instructions
- Place ribs in a 4 or 6 qt. pressure cooker. Add 2 cups of water.
- Lock lid in place. Place pressure regulator on vent pipe.
- Over high heat, bring cooker up to pressure. Reduce heat just enough to maintain pressure and pressure regulator rocks gently; cook for 5 minutes.
- Quick release the pressure. Carefully remove lid. Drain off the liquid.
- In a medium mixing bowl stir together brown sugar, garlic, mustard, pepper, tomato sauce, 1/3. water, and vinegar.
- Pour the tomato mixture over the ribs in cooker. Lock lid in place.
- Over high heat, bring cooker up to pressure. Reduce heat just enough to maintain pressure and pressure regulator rocks gently; cook for 7 minutes.
- Quick release the pressure and carefully remove the lid.
- Makes: 4 main dish servings.
