Savory Pot Roast with Harvest Vegetables

List of Ingredients
- 2T. oil
- 3 lb. boneless beef bottom round or rump roast
- 1can seasoned beef broth with onion
- 3/4c. V8 juice
- 2c. fresh or frozen baby carrots
- 3 med. potatoes, quartered
- 3 stalks celery, cut into 1 inch pieces
- 2T. flour
- 1/4c. water
Instructions
- Heat oil in saucepot. Add roast and cook until browned on all sides. Drain.
- Add broth and vegetable juice. Heat to a boil. Cover and cook over low heat 1 hr and 45 mins.
- Add vegetables. Cover and cook 30 mins. or until vegetables are tender.
- Remove roast and vegetables and keep warm. Mix flour and water. Add to saucepot.
- Cook, and stir until mixture boils and thickens. Serve with roast and vegetables.
