    Savory Pot Roast with Harvest Vegetables

    List of Ingredients


    • 2T. oil
    • 3 lb. boneless beef bottom round or rump roast
    • 1can seasoned beef broth with onion
    • 3/4c. V8 juice
    • 2c. fresh or frozen baby carrots
    • 3 med. potatoes, quartered
    • 3 stalks celery, cut into 1 inch pieces
    • 2T. flour
    • 1/4c. water


    Instructions


    1. Heat oil in saucepot. Add roast and cook until browned on all sides. Drain.
    2. Add broth and vegetable juice. Heat to a boil. Cover and cook over low heat 1 hr and 45 mins.
    3. Add vegetables. Cover and cook 30 mins. or until vegetables are tender.
    4. Remove roast and vegetables and keep warm. Mix flour and water. Add to saucepot.
    5. Cook, and stir until mixture boils and thickens. Serve with roast and vegetables.
    6. Serves:6
