    1/2 lb. chicken livers
    1 C long grain rice
    2 C chicken stock
    1 large onion, chopped
    2 green onions, chopped
    2 fresh red chili peppers
    2 T peanut oil
    salt and pepper to taste

    Recipe




    Serves 4

    Bring the chicken stock to a boil in a medium pot. Add the rice and bring to a new boil, stir with a wooden spoon, cover and simmer for 15 minutes. Heat the peanut oil in a large skillet and saute the chopped (white) onion. Chop the chicken livers and add them to the onion. Sauté until the liver is cooked through, about 5-8 minutes. Add the green onions, chili peppers, salt, pepper and rice. Cook over medium heat for a few minutes, stirring and adjusting the seasonings as needed.
