1/4 cup (60mL) onion, chopped
2 Tbsp. (30mL) olive oil
1 cup (240mL) long grain rice
2 cups (480mL) low sodium chicken broth
4 Oz. (112g) feta cheese
1 Tbsp. (15mL) Mrs. Dash® Lemon Pepper Seasoning Blend
1 Tbsp. (15mL) fresh mint, chopped
Recipe
1. Cook onion in hot oil until tender, but not brown, in a large saucepan.
2. Add uncooked rice, cook and stir for 1 minute.
3. Slowly add chicken broth. Bring to a boil and reduce heat. Cover, simmer for 15 - 20 minutes or until rice is tender and liquid absorbed.
4. Crumble feta cheese.
5. Stir in feta, Mrs. Dash® Lemon Pepper and mint.
6. Serve warm.
