1 Tbsp. (15mL) Mrs. Dash® Extra Spicy Seasoning Blend
2 Tbsp. (30mL) olive oil
1/2 cup (120mL) chopped onion
3/4 cup (180mL) long grain rice, uncooked
2 cups (480mL) reduced fat, sodium free chicken broth
1 Tbsp. (15mL) lime juice
1 cup (240mL) chopped, seeded tomato
1/2 cup (120mL) chopped green bell pepper
Recipe
1. Heat oil in large saucepan.
2. Add onion and saute about 2 minutes.
3. Add rice and cook 2 additional minutes.
4. Add broth, Mrs. Dash® Extra Spicy and lime juice; mix well.
5. Simmer, covered, 15 minutes.
6. Add tomatoes and green pepper.
7. Simmer an additional 5 minutes or until rice is tender and all liquid is absorbed.
