Strait-Shootin' Spanish Rice

List of Ingredients
- 1c. rice, uncooked
- 2T. vegetable shortening
- 1 small onion, chopped
- 1/2 green bell pepper, chopped
- 1 1/2 t. chili powder
- 1 (10 oz) can tomatoes, chopped
- 2c. water
Instructions
- In a skillet, brown rice in shortening. Add the onion and bell pepper.
- Stir. Add salt, chili powder, and tomatoes, including juice.
- Add water. Cover and simmer for 30 mins. or until rice is tender and liquid is absorbed.
- Makes: about 6 servings
