Caribbean Chicken Salad

1/4 cup Dijon mustard
1/4 cup honey
1 1/2 tablespoons white sugar
1 tablespoon vegetable oil
1 1/2 tablespoons cider vinegar
1 1/2 teaspoons lime juice
2 tomatoes, seeded and chopped
1/2 cup chopped onion
2 teaspoons minced jalapeno peppers
2 teaspoons chopped fresh cilantro
2 skinless, boneless chicken breast halves
1/2 cup teriyaki sauce
3/4 pound mixed salad greens
1 (8 ounce) can pineapple chunks, drained
1/2 (13.5 ounce) package corn tortilla chips Recipe
1 To Make Dressing: In a small bowl combine the mustard, honey, sugar, oil, vinegar and lime juice. Mix all together. Cover and refrigerate.
2 To Make Salsa: In a small bowl combine the tomatoes, onion, jalapeno pepper and cilantro/parsley. Mix all together. Cover and refrigerate.
3 Marinate chicken in teriyaki marinade for at least 2 hours before grilling. Lightly oil grill and preheat to high. Remove chicken from marinade and cook on hot grill for 10 to 15 minutes on each side, or until no longer pink inside.
4 Place prepared salad mix on plates. Pour 1/2 of salsa over each salad and sprinkle 1/2 of pineapple chunks on each salad. Then break tortilla chips into large chunks and sprinkle over salads. Lay 1/2 of the grilled chicken strips on each salad. Finally, pour 1/2 of dressing directly on each salad and serve.
