1 lb. lean rare roast beef shaved
5 to 6 slices of cheese (your preference)
2 tablespoons olive oil or cooking spray
6 to 8 sub rolls

10 to 15 slices pepperoni (pizza size) cut into quarters
onions
peppers
mushrooms
sauce of your choosing i.e. bbq, teriyaki
Recipe
Slice vegetables of your choosing. Using an oiled skillet, begin to saute the vegetables (approx 5 minutes). Add the pepperoni (though roast beef is much leaner) and stir in with the vegetables. Saute for approx. 1 minute. Spread out the shaved roast beef on top of the vegetables, cover skillet, and lower heat (stirring is not necessary) until all the pinkish color is gone (approx. 5 min.). Next, stir everything in the skillet until it is mixed thoroughly and add a light layer of sauce. Place cheese slices on top to cover mixture, then cover skillet again. Cut open sub rolls and lay them on a plate. Every couple of minutes uncover skillet till cheese is totally melted (approx 5 minutes). Spoon mixture into rolls and serve.
