Big Pot Sauce

List of Ingredients
- 1 large diced onion
- 20 cloves garlic
- 1/2c. olive oil
- 1T. crushed red pepper
- 2(4oz) hot Italian sausage links
- 1c. dried oregano
- 1/4c. dried basil
- 7 (28oz) cans whole peeled tomatoes
- 1c. red wine
Instructions
- Cook sausage, drain. Cut into bite size pieces. Set aside.
- In large pot saute onion, garlic, crushed red pepper in olive oil until brown.
- Stir in sausage, half the oregano, half the basil, cook 10 mins.
- Stir in tomatoes. Bring to a boil. Stir in remaining oregano and basil.
- Reduce heat, simmer 90 mins. Pour in red wine. With a hand held mixer, carefully blend sauce until tomatoes are chopped in small pieces and sauce is thick and chunky.
