Buttery Onion Sauce

Goes with any fish or seafood. Simple and quick to make. Adds a finishing touch.
1/4-cup (60 ml) hard margarine (butter browns too fast)
2-cups (500 ml) coarsely chopped onion
2-tbsp (30 ml) all-purpose flour
1/2-tsp (2 ml) salt
1/4-tsp (1 ml) pepper
1 3/4-cups (425 ml) water
Melt butter in frying pan. Add onion. Cover and slowly fry until onion is very soft. Do not brown.
Mix in flour, salt and pepper. Stir in water until it boils and thickens. Serve over fish.
Makes a scant 2 cups (500 ml).
White Sauce: Omit onion. Melt butter, mix in flour, salt and pepper. Stir in 1 cup (250 ml) milk instead of water. Serve with any fish.
