2 cups Pinto beans
3 quarts water
4 qt pan
3/4's lb. diced fried bacon
1 jalapeno or serrano chili pepper chopped
1 tomato chopped
1 med. chopped onions
1/2 cup chopped cilantro
2 pinches of pepper
salt to taste
1 clove garlic minced
1/2 cup beer

Clean & rinse beans. In your pan add beans to water along with 1 minced clove of garlic. Cover & bring to a boil, reduce heat to medium cook for about 30 minutes, adding more water as needed so beans don't scorch. Meanwhile pan fry bacon till crisp, crumble and reserve along with bacon grease. Also chop your chile, onion and cilantro.(reserve) You just want to have a delicious mild hint of hot chili pepper (nothing inedible). When beans are half way done (still firm if pinch tested) add your onions, chili peppers, tomatoes, salt & pepper, continue cooking. When beans are tender add your beer, cilantro and bacon along with bacon grease, simmer for about five minutes more so flavor can incorporate.
