Over-the-Rainbow Macaroni and Cheese

This recipe is created by Patti LaBelle from one of Oprah's episodes. Patti LaBelle says that the sure sign of a good cook is if their macaroni and cheese will make you cry! According to Oprah, Patti's version just might bring tears to your eyes. I didn't cry, it just made me so happy!
List of Ingredients
1 tablespoon vegetable oil
1 lb elbow macaroni
9 tablespoons butter, divided
1/2 cup shredded muenster cheese
1/2 cup shredded milk cheddar cheese
1/2 cup shredded sharp cheddar cheese
1/2 cup shredded monterey jack cheese
2 cups half-and-half
1 cup Velveeta cheese, cut into small cubes (8 ounces)
2 large eggs, lightly beaten
1/4 teaspoon seasoning salt
1/8 teaspoon fresh ground black pepper
Recipe
1. Preheat the oven to 350 degrees.
2. Lightly butter a deep 2 1/2-quart casserole.
3. Bring a large pot of salted water to a boil over high heat.
4. Add the oil, then the elbow macaroni, and cook until the macaroni is just tender, about 7 minutes.
5. Do not overcook.
6. Drain well.
7. Return to the cooking pot.
8. In a small saucepan, melt 8 tablespoons of the butter.
9. Stir into the macaroni.
10. In a large bowl, mix the Muenster, mild and sharp cheddar, and Monterey Jack cheeses.
11. To the macaroni, add the half-and-half, 1 1/2 cups of the shredded cheese, the cubed Velveeta, and the eggs.
12. Season with salt and pepper.
13. Transfer to the buttered casserole.
14. Sprinkle with the remaining 1/2 cup of shredded cheese and dot with the remaining 1 tablespoon of butter.
15. Bake until it's bubbling around the edges, about 35 minutes.
16. Serve hot.
