- 1T. oil
- 1 1/2 lb. skinless, boneless chicken thighs
- 1 med. onion, thinly sliced
- 2 garlic cloves, minced
- 2T. chili powder
- 1 (14 1/2 oz) can stewed tomatoes
- 1 (15 oz) can black beans or pinto beans, rinsed and drained
- 1/3c. chopped fresh cilantro
- 1/2t. salt
- 1/2t. black pepper
Instructions
- In a large skillet, warm the oil over medium high heat. Add the chicken and saute until browned, about 6 mins.
- Reduce the heat to medium, stir in the onion, garlic, and chili powder, and cook, stirring frequently, until the onion is softened, about 3 minutes.
- Add the tomatoes and beans. Simmer, stirring occasionally, until chicken is cooked through and juices have thickened, about 10 minutes.
- Stir in the cilantro and season with salt and pepper.
