    2 tb Olive oil
    1 Green pepper; chop
    1 Red onion; slice
    1 Cl garlic; mince
    10 oz Pk frozen sliced okra; thaw, drain
    2 md Yellow squash; slice
    14 1/2 oz Can tomatoes w/juice
    2 tb Lemon juice
    1 tb Fresh ginger; mince
    1 tb Orange zest; grate
    1 ts Salt
    1/8 ts Cayenne pepper
    1/4 c Fresh cilantro; chop

    In pot heat oil over med-high heat. Add pepper, onion and garlic; cook until softened, about 8 minutes. Add okra; cook until lightly browned, about 6 minutes. Add squash, tomatoes w/juice, lemon juice, ginger, orange zest, salt and cayenne. Reduce heat to low. Cover and simmer until squash is tender, 10-15 minutes. Remove from heat; stir in cilantro.
