Ginger Glazed Carrots

- 2T. butter, divided
- 3/4c. water
- 1 lb. whole baby carrots
- 1/4c. honey
- 2T. orange juice
- 1t. ground ginger
- 1/8t. ground nutmeg
- 1/2t. parsley
Instructions
- Place 1T. butter and water in skillet. Add carrots, cover and cook over med. heat 6-8 mins. or until carrots are slightly tender. Drain.
- Combine honey, orange juice, ginger, nutmeg. Pour over carrots and add remaining 1T. butter.
- Cook 5-6 mins. stirring frequently to glaze carrots. Sprinkle with parsley just before serving.
