Roasted Potato Wedges

- 4 potatoes, peeled
- 1T. olive oil
- 1/2t. kosher salt
Instructions
- Cut potatoes into wedges. Pour oil and salt into bowl.
- Toss wedges in oil. Place on a jellyroll pan and roast at 425 for 25 mins.
- Raise temp. to 475 and brown potatoes for about 5 mins.
- Makes: 4 servings.
