    Fried Quail with Onion Gravy

    List of Ingredients


    • 30 quail, cleaned
    • salt and pepper
    • all purpose flour
    • 8 slices bacon
    • 2c. peanut oil
    • 1/4c. all purpose flour
    • 1c. water
    • 2/3c. onion, minced
    • dash of garlic salt


    Instructions


    1. Sprinkle quail with salt and pepper to taste; dredge in flour, and set aside.
    2. Fry bacon in a large skilet. Remove bacon, reserve for other uses.
    3. Add peanut oil to dripings in skillet; heat over medium heat.
    4. Add quail; cook 10-12 minutes on each side or until done.
    5. Remove quail from pan; drain on paper towels. Reserve 1/4c. drippings in pan.
    6. Add flour to drippings, stirring until smooth. Cook 1 minute, stirring constantly.
    7. Gradually add water, stirring well. Add onion and cook over medium heat, stirring constantly, until thickened and bubbly.
    8. Stir in 1/2t. salt, 1/8t. pepper, and garlic salt.
    9. Yield: 15 servings.
