    List of Ingredients


    • Doves or quail, 2 per serving
    • salt
    • pepper
    • 2 or 3 bacon strips
    • 1/2 stick butter
    • 1/2 lemon, juiced
    • 1T. Worcestershire or to taste
    • toast points


    Instructions


    1. Season each bird well with salt and pepper. Barely cover bottom of a heavy skillet with water.
    2. Place birds and cover with a tight fitting lid. A flat lid is preferable with a brick set on top.
    3. Steam birds 8-10 minutes. Remove birds, pour off liquid.
    4. Fry bacon; remove and brown bird in dripping. Pour grease off and stir in butter, lemon juice, and Worcestershire.
    5. Serve birds with sauce over toast points.
