- Doves or quail, 2 per serving
- salt
- pepper
- 2 or 3 bacon strips
- 1/2 stick butter
- 1/2 lemon, juiced
- 1T. Worcestershire or to taste
- toast points
Instructions
- Season each bird well with salt and pepper. Barely cover bottom of a heavy skillet with water.
- Place birds and cover with a tight fitting lid. A flat lid is preferable with a brick set on top.
- Steam birds 8-10 minutes. Remove birds, pour off liquid.
- Fry bacon; remove and brown bird in dripping. Pour grease off and stir in butter, lemon juice, and Worcestershire.
- Serve birds with sauce over toast points.
