List of Ingredients
- Doves: just the breast
- onions
- celery
- salt and pepper
- Sauce:
- 1 stick butter, melted
- juice of 1 lemon
- 1t. salt
- 1t. pepper
- 3T. Lea & Perrins
Instructions
- Boil the dove breasts in water with quartered onions, celery stalks, salt and pepper until tender and done.
- Drain. Arrange breasts in a shallow baking dish, skin side up. Cover. This can be done the day before.
- Refrigerate. Before broiling, have doves at room temp. Make the sauce.
- Put the doves under the broiler and baste frequently with the heated sauce.
- The doves should broil about 5-10 minutes until golden brown.
- Put pan low in the oven so that the doves will not brown too quickly. Before serving, pour the remaining sauce over the doves.
- At least three breasts are needed for each adult.
