2 Graham Cracker Crusts
2 C. coconut
1 stick butter
1 c. chopped nuts
1 can eagle brand milk
16oz. cool-whip
8oz. cream cheese
caramel topping
Recipe
Preheat oven to 350 degrees.
In a shallow baking pan melt butter in oven. Add chopped nuts and coconut to butter until coconut is lightly browned. Stir peridocally to prevent burning. Remove from oven. Turn oven off.
In a large mixing bowl, blend cream cheese which has beeen softened. Add eagle brand milk and blend gradually. When they are fully mixed, fold in cool-whip.
Place half coconut butter mixture in the bottoms of both pie shells. Spread evenly. Next, layer the cheese on top of coocnut. Drizzle caramel on top of cheese mixture. Repeeat layers-coconut-cheese-caramel, in the other pie shell. Replace plastic over on top. Place in freezer. Serve right out of the freezer or let sit out slightly to soften.
Final Comments
May be kept in freezer for several weeks!
