1 unbaked 9in pie crust
1 1/2 cup pumpkin puree
1/2 cup sugarfree maple syrup
1/2 tsp ground ginger
1 or 2 packets of Sweet & Low
3 large eggs
1 cup skim milk
1 tsp cinnamon
1/2 tsp ground nutmeg
Recipe
Preheat oven to 350 degrees.
Prick pie crust and bake 10 minutes.
Mix eggs and pumpkin puree.
Stir in rest of ingredients and blend well.
Pour into half-baked pie shell. and return to oven.
Bake until set, about 45 minutes.
