Oatmeal Waffles

Recipe Introduction
I found this recipe in a book that came with a new waffle iron my wife and I got for Christmas. I'd like to share it - and double check with anyone to make sure it's a legal, albeit special treat. They came out beautifully brown, nice and tasty, lots of crunchiness in the oatmeal that got "toasted" in the waffle iron, etc. This made two nice 4" square waffles, I ate one plus a little bite of the other half! List of Ingredients
1 egg, room temp, separated
1 1/2 cups oats
3/4 cup milk
4 tb. butter/margarine, melted
1 t. baking powder
1 T. brown sugar (I omitted, used a small squirt of sugar free maple syrup instead)
Recipe
Beat egg white in a small bowl until stiff, set aside. Mix together dry ingredients, and set aside. Combine egg yolk, milk, and melted butter. Add to dry ingredients, mixing until just blended. Fold in the beaten egg white until just mixed. Do no over beat batter. Cook waffles a little longer for extra crispness.
