    1/4 c cold pressed oil
    1 1/2 c frozen unsweetened apple juice concentrate, thawed
    3 lg. eggs whites
    1/2 c unsweetened applesauce
    1 t vanilla
    2 1/2 c whole wheat flour
    1 c quick cooking rolled oats
    3/4 t baking soda
    2 t baking powder
    1 t cinnamon
    1/2 t nutmeg
    1 c grated apples, peeled and cored (about 1 large apple)

    Preheat oven to 375. Spray 9x13 cake pan with PAM.Beat together oil, apple concentrate, and egg whites. Add applesauce and vanilla, combine well.
    Mix together flour, oats, soda, baking powder, cinnamon, and nutmeg; add to the liquid mixture and beat. Add grated apple; stir until blended. Pour into pan. Bake 25 to 30 minutes or until a wooden pick inserted in the center comes out clean.
