    2 apples, shredded
    2 eggs and 1/2 cup egg sub
    1/2 cup cottage cheese
    2 cups whole wheat flour
    8 tsp. fructose
    6 1/2 scoops (126g) vanilla protein powder
    3 Tbs. oil
    19 1/2 tsp. slivered almonds
    2 tsp. vanilla
    2 tsp. baking soda
    1 tsp. salt
    1 tsp. cinnamon
    1/2 tsp. baking powder
    Water

    Recipe



    Preheat oven to 350. Mix apples, eggs, egg sub, fructose, and oil in a large bowl. Add all other ingredients and mix well, adding some water until batter is the right consistency (I used about 3/4 cup). Fill 24 muffin cups (fill to top) and bake for about 20 minutes. Allow to cool on cooling rack before removing from pan.
