List of Ingredients
1 c quick cooking rolled oats
1 c whole wheat flour
1 t baking powder
1/2 t baking soda
1 lg. egg white
1/2 t vanilla
1/2 t coconut extract
1/4 c frozen unsweetened pineapple juice concentrate, thawed
1/2 c frozen unsweetened apple juice concentrate, thawed
1/2 c unsweetened crushed pineapple, drained
1/2 c buttermilk
Recipe
Combine dry ingredients, stir well. Combine the remaining ingredients and add them to the dry ingredients. Stir until just moistened. Spray muffin pans with PAM, fill tins two-thirds full. bake at 400 for 15-20 minutes or until brown
