Spicy Pumpkin Bran Muffins

List of Ingredients
2 c. All-Bran
1-3/4 c milk
3-3/4 c. ww pastry flour
1-1/2 c. Splenda
4 tsp. baking powder
1/2 t. salt
1 15oz can pumpkin puree
3/4 c. vegetable oil
3 eggs, beaten
2 t. cinnamon
1 t. ground ginger
1/2 t ground cloves
1/2 c. chopped nuts-optional
Recipe
Preheat oven to 350 degrees. Combine cereal and milk in large bowl and let sit about 10 minutes to soften cereal. Sift together the flour, Splenda, salt and baking powder. Mix the pumpkin, oil, eggs, and spices together with cereal/milk. Then combine with the dry ingredients just until mixed, do not use electric mixer. Stir in the nuts. Pour into two buttered 9x5x3 inch loaf pans. Bake 55-65 minutes at 350 degrees. Recipe makes about 30 muffins and bake those for 30 minutes at 350 degrees.
As far as the cereal goes, I use half All Bran and half shredded wheat and bran as All Bran is very strong tasting, and I double the spices for the same reason. If you wanted to go lower fat, you can substitute applesauce (unsweetened of course) for the oil and you can't tell the difference.
