    List of Ingredients





    1 package SF Peach (or Orange) Jell-o
    1 cup boiling water
    3 medium ripe peaches; peeled and sliced
    2 Tbsp Splenda
    1/4 Tsp Almond extract
    1/2 cup Whipping Cream, whipped
    Fresh Mint

    Recipe



    In a large mixing bowl, dissolve gelatin in water. In a blender, combine peaches, splenda and extract. Process until smooth. Stir in Jell-o. Chill until syrupy; about 1 1/2 hours Beat on high speed until doubled in volume, about 5 minutes. Fold in the whipped cream. Spoon into dessert dishes. Chill until firm. Garnish with mint leaves. Serves 8
