Chicken Quesadillas

List of Ingredients
4 cups skinless, boneless chicken breasts, diced
4 cloves garlic, minced
1 - 4 oz. can green chilies, drained
1 large onion, diced
1 cup cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
2 tsp. chili powder
12 ww tortillas
1 Tbsp. vegetable oil
sour cream
hot peppers
diced tomatoes for garnish
Recipe
Saute onion and garlic in oil in a large skillet. Cook until onion is tender then remove onion and garlic from pan. Add chicken and chili powder and stir-fry until chicken is done usually 3 - 4 minutes. Remove chicken from the skillet and add to the onion and garlic. Add both cheeses, and green chilies and mix well. Spray skillet with non-stick cooking spray and heat over medium heat. Place equal amounts of the chicken mixture into each tortilla and fold tortilla over. Place in skillet and brown each side until cheese melts. Remove from heat and serve with sour cream, fresh diced tomatoes and hot peppers, if you wish, for garnish. These chicken Quesadillas are wonderful and fun to prepare. It's hard not to try seconds or even thirds of this dish.
