    Recipe Introduction


    Prep time: 15 minutes Cooking time: 1 hour

    List of Ingredients




    3 tablespoons olive oil
    1/2 cup chopped onion
    1/2 cup chopped celery
    1/2 cup chopped carrots
    2 cans (28 oz. each) plum tomatoes, chopped, juice reserved
    1/2 teaspoon salt
    1/4 teaspoon freshly ground pepper
    1 pound pasta of your choice , cooked according to package directions
    1/2 cup freshly grated Parmesan cheese


    Recipe



    1. Heat oil in large Dutch oven over medium heat. Add onion and cook until lightly browned, about 5 minutes. Add celery and carrots and cook, stirring, 5 to 8 minutes more, until vegetables soften.

    2. Slowly add tomatoes and juice, breaking up tomatoes with spoon; add salt and pepper. Reduce heat and simmer sauce 1 hour, stirring occasionally, until thickened. (Makes 4 3/4 cups.)

    3. Toss hot pasta with 3 cups marinara sauce. Divide into six shallow serving bowls. Serve with remaining sauce, Parmesan Makes 6 servings.
