List of Ingredients
2 Tbsp. Butter
1/4 c. Chopped Bell Pepper
2 Tbsp. Chopped Onion
1 Large Sprig Parsley
1/8 Tsp. Thyme Leaves
1 (8oz.) can "Rotel" Tomatoes
1 (lb.) can Pumpkin
2 C. Chicken Broth
1/2 C. Milk
1 Tsp. Salt
Recipe
Melt butter in large saucepan. Add bell pepper, onion, parsley, thyme, and bay leaf. Cook 5 Minutes. Add tomatoes, pumpkin and chicken broth. Cover and simmer 30 minutes, stirring occasionally. Press mixture through food mill, wire strainer, or process in blender or food processor.
Stir milk into soup. Add salt and cook stirring frequently until mixture comes to a boil. Serve immediately.
