    Veggie Chili

    List of Ingredients


    • 1 tsp olive oil
    • 3/4 cup mixed vegetables
    • 1 cup low-fat or fat-free canned vegetarian chili
    • 1 oz low-fat cheddar or colby cheese, shredded
    • 1 cup cooked bulgur


    Instructions


    1. Heat oil in a non-stick skillet. Add vegetables and sauté until tender. Prepare chili as per package directions. Top with cheese and serve over bulgur with vegetables on side.
