Veggie Chili

List of Ingredients
- 1 tsp olive oil
- 3/4 cup mixed vegetables
- 1 cup low-fat or fat-free canned vegetarian chili
- 1 oz low-fat cheddar or colby cheese, shredded
- 1 cup cooked bulgur
Instructions
- Heat oil in a non-stick skillet. Add vegetables and sauté until tender. Prepare chili as per package directions. Top with cheese and serve over bulgur with vegetables on side.
