Double Chocolate Mint Chip Cookies

List of Ingredients
- 1 ten ounce package mint flavored chocolate chips
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1 egg
- 1/2 cup chopped nuts (optional)
Instructions
- Pre-heat oven to 375 degrees
- Melt 3/4 cup mint chocolate chiups over boiling water. Stir until smooth & remove from heat; cool to room temperature.
- In small bowl, combine flour, baking soda and salt; set aside
- In large bowl combine butter, brown sugar, sugar, and vanilla; beat until creamy
- Add melted chips and egg; beat well
- Gradually blend in flour mixture.
- Stir in remaining mint chocolate chips and nuts
- Drop by rounded tablespoonfuls onto ungreased cookie sheets
- Bake for 8-9 minutes. Cool completely

Makes about 1 1/2 dozen 2 inch cookies
