    Double Chocolate Mint Chip Cookies

    List of Ingredients


    • 1 ten ounce package mint flavored chocolate chips
    • 1 1/4 cups all-purpose flour
    • 3/4 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/2 cup butter
    • 1/2 cup brown sugar
    • 1/4 cup sugar
    • 1 egg
    • 1/2 cup chopped nuts (optional)


    Instructions


    1. Pre-heat oven to 375 degrees
    2. Melt 3/4 cup mint chocolate chiups over boiling water. Stir until smooth & remove from heat; cool to room temperature.
    3. In small bowl, combine flour, baking soda and salt; set aside
    4. In large bowl combine butter, brown sugar, sugar, and vanilla; beat until creamy
    5. Add melted chips and egg; beat well
    6. Gradually blend in flour mixture.
    7. Stir in remaining mint chocolate chips and nuts
    8. Drop by rounded tablespoonfuls onto ungreased cookie sheets
    9. Bake for 8-9 minutes. Cool completely


    Final Comments


    Makes about 1 1/2 dozen 2 inch cookies
