"I can't believe it's meatloaf"

the most moist, most delicious meatloaf I've tasted yet
List of Ingredients
4 slices white bread, crusts removed (preferrably slightly stale)
1 1/2 lbs. ground chuck-beef mix
1 pound mild pork sausage
2 eggs
4 or 5 slices thick cut bacon
salt and pepper to taste
enough milk to dampen bread
3-4 cups homemade tomato relish (recipe under sauces)Recipe
Place torn bread in bowl and add milk enough to make soggy, but not squishy. Leave it while you gather remaining ingredients for meatloaf. Puree 1 1/2 cups homemade tomato relish (I use my hand-held drink mixer) or add it chunky style. Combine relish, beaten eggs, meat mixture, salt and pepper. Squeeze excess milk from the bread and add to the mixture. Roll your sleeves up and dive in! Mix thoroughly using your hands until consistency smells and feels right. Lightly oil a cookie sheet or a loaf pan. (cookie sheet makes for easier draining of grease during cooking) Form into a loaf shape in middle of cookie sheet. Top with 1/2 cup tomato relish and slices of bacon. Bake for 1 to 1 1/2 hours at 350 degrees, draining grease occasionally and rotating for even browning. Serve with additional tomato relish.
