    so simple, but so delicious

    List of Ingredients




    2 whole fryer chickens
    2 large onions quartered
    4 stalks of celery
    2 garlic cloves, smashed
    salt, pepper and tony chachere's cajun seasoning to taste
    3/4 to 1 cup mayonnaise (I only use Blue Plate)
    2 - 3 tbsp. chicken stock from boiling chicken

    Clean and remove any giblets from whole chicken. Place chicken in large stock pot with onions, 2 stalks cut celery (each) and smashed garlic cloves. Sprinkle liberally with salt, pepper and cajun seasoning. Boil chicken til done, about 1 hour. Remove chicken to cool, then shred chicken and place in large bowl. Add in mayonnaise until desired consistency and season to taste with salt, pepper and cajun seasoning. Add remainder of celery, finely diced. Add 2 to 3 tbsp fresh stock (for extra flavor). Serve immediately or chill in fridge.
