our absolute favorite treat! It's meant to be a side dish, I believe, but we love to top burgers, steaks, chicken and pork chops with it or eat giant bowlfuls of it alone!
4 slices bacon, chopped
2 2/3 cups fresh sliced mushrooms
1/2 tsp. garlic, minced
1/4 cup diced sun-dried tomatoes
3 tbsp. heavy cream
(optional) 1/3 cup shredded parmesan cheese
Recipe
Cook bacon in heavy skillet over high heat until crisp. Add mushrooms and cook till softened. Add garlic, cook 4 minutes. Add tomatoes and cream and cook until cream is absorbed. If using cheese, sprinkle on top, stir and cook one minute.
I use the thick-cut bacon, because I think it has more consistency and doesn't cook apart while frying. I also use minced garlic in the jar, simply because it's simpler. Also, I omit the cheese, because I feel the parmesan overpowers the mushroom. I usually at least double this recipe as the whole family loves it and it goes great with anything.
