    List of Ingredients


    • 2 tbsp. melted butter
    • 2 c milk
    • 2 tbsp flour
    • 1/2 tsp salt & 1/8 tsp. pepper
    • 1 c shredded cheddar cheese
    • 1 c chopped Canadian bacon
    • 1/4 c chopped green onion
    • 1 (4oz) can mushroom stem & pieces (drained)
    • 1 dozen eggs
    • 3 tbsp. butter
    • 11/2 c buttered bread crumbs
    • 1/8 tsp. paprika


    Instructions


    1. Combine 2 tbsp. butter, flour, blending til smooth; cook over low heat til bubbly, stir in milk; cook til smooth and thickened, stirring constantly. Add salt, pepper and cheese. Heat til cheese melts, stirring constantly. Set aside. Saute canadian bacon and onion in 3 tbsp. butter til onion is tender. Add eggs; cook til set, stirring til scrambled. Fold in mushrooms and cheese sauce. Spoon egg mixture into lightly greased 12 x 7 x 2 baking dish. Top with bread crumbs & sprinkle with paprika. Bake at 350 for 30 in. Usually takes longer...you want it to be nice and bubbly. May be prepared 2 days ahead & ref.
