Black-Eyed Pea Hummus

1 15-oz. can black-eyed peas, rinsed and drained
1/4 cup tahini (sesame seed paste)
1/4 cup olive oil
1/4 cup lemon juice
2 cloves garlic
Salt and pepper to taste
1/4 tsp. ground cumin
1/4 tsp. red pepper
1/4 cup water
Fresh parsley, chopped
Combine all ingredients except parsley in a food processor and process until smooth. Cover and chill until ready to serve. Sprinkle with parsley and serve with pita or tortilla chips.
