Portobello Quesadillas

List of Ingredients
3 ozs. bacon
8 cups Portobello mushrooms, sliced
1 cup cheddar cheese
8 flour tortillas
Cooking spray
Sour cream
Cook bacon in a skillet until crisp, remove and set on paper towels to drain. Saute mushroom in the same pan the bacon was cooked in, remove and wipe pan clean. Combine bacon and mushrooms together and toss. Sprinkle some cheese on 4 tortillas followed by mushroom mixture. Sprinkle more cheese on top of mushrooms and top with 4 remaining tortillas. Spray with cooking spray and heat in skillet for 2 minutes each side. Remove and cut into wedges. Serve with sour cream and salsa recipe to follow
Salsa:
2 cups plum tomatoes, diced
1 small red onion, diced
1/3 cup fresh cilantro, minced
1 jalapeno pepper, seeded and diced
Juice of one lime
2 garlic cloves, minced
Salt and pepper to taste
Combine all ingredients in a bowl and mix well.
