    Source of Recipe

    Don Speer

    List of Ingredients

Serves over 100 (makes 3 Gal approx.)
    (fine chopped):
    Onions 1 cup
    Celery 1 Cup
    Sweet Green Peppers 1 Cup

Cider Vinegar 2 Qt 2 liter Water 6 Cp 1.5 Liter In a large pot,
combine above ingredients and cook until the vegetables are done.

    Add:
Ketchup (Catsup) 7 Lb (#10 can)
    Tomato Paste 36 oz 1002 g
Prepared (Yellow) Mustard 1 1/2 Cup
    Worcestershire Sauce 3/4 Cup
Meat (Steak) Sauce (A-1) 3/4 Cup
Lemon (or Lime) Juice 3/4 Cup
Liquid Hickory Smoke seasoning 1/4 Cup

Let cook on simmer while you mix the following spices in a bowl.
    Granulated Sugar 1 1/2 Cup
Brown Sugar 4 Cup (add more to taste later)
    Ground Cloves 1 Tablespoon
    Allspice 1 Tablespoon
    Chili Powder 1 Tablespoon
    Paprika 3 Tablespoon
Garlic Powder 1 Tablespoon (or 1 head fresh in first step)
    Black Pepper (optional) 1 Tablespoon
Add to cooking liquid and simmer for about 1 Hour.

    Add
    1/2 Cup Molasses
    1/2 Cup Honey
    Simmer for another hour.
    Ready to use!

If bottling up to freeze for later use, turn off heat and let cool,
then pack it up. To use as marinade - mix 1 part sauce to 5 parts
water. To use as basting sauce - mix 1 part sauce to 1 part water (or
your favorite beer or wine). Makes an excellent BBQ dipping sauce as
is. (Add a little to some ground beef for Sloppy Joe Sandwiches.)

If you need to make less (1 Gallon): adjust Tablespoons to teaspoons
and reduce all other ingredients to 1/3rd of the original amounts.
