German Wilted Cucumber Salad

2 large cucumbers, peeled, sliced in two lengthwise,
seeds removed
4 tsp salt
1/2 cup canned consomme
2 Tbs red wine vinegar
2 tsp honey or sugar
1 tsp vegetable or olive oil
Freshly ground black pepper to taste
Slice the peeled and seeded cucumbers very thinly, either by hand or
with a food processor. Place the slices in a sieve or colander and
sprinkle with the salt. Allow to drain 20 to 30 minutes. Rinse the
cucumber slices thoroughly and dry with paper towels. While the
cucumber is draining combine the consomme, vinegar, honey and oil in a
small saucepan and boil over high heat until reduced to about 1/4 cup. Pour this over the cucumber slices in a small bowl, season
with pepper, toss to coat the cucumbers, and chill at least 30
minutes. Serves 4.
