Pineapple Salsa
List of Ingredients
- 2 cans crushed pineapple w/juice
- 2 onions, cut into 1/4-inch dice
- 1 red bell peper, roasted, seeded and cut into 1/4-inch dice
- 4 cloves of garlic, minced
- 2 Tbls finely minced ginger
- 1 cup currants
- 1 tsp red chili pepper flakes
- 1 tsp salt
- 1/4 tsp ground cinamon
- 1 cup (packed) light brown sugar
- 1/2 cup cider vinegar
Instructions
- Bring all ingredients to a boil.
- Reduce to med. heat and simmer for 30 min.
- Let cool to room temperture.
- Refrigerate, covered.
- Serve with pork, fish or poultry
Final Comments
May be searved hot, cold, or at room temperature.
