Baked Kasseri Cheese Spread

12 oz. kasseri or scamorze cheese, shredded (3 cups)
2 tbsp. all-purpose flour
2/3 cup kalamata olives, pitted and quartered
2 tbsp. snipped fresh oregano
1 clove garlic, minced
� tsp. crushed red pepper
French bread baguette slices, apple wedges, or crackers
Recipe
In a medium bowl toss together the cheese and flour. Spread cheese mixture evenly in a 9-inch pie plate or 1-quart quiche dish. Combine the olives, oregano, garlic, and red pepper; sprinkle atop the cheese.
Bake in a 325� oven for 12 to 15 minutes or until cheese just begins to melt. Serve immediately with bread, apples, or crackers. Rewarm cheese if it starts to set up too much. Makes 12 servings.
