Buttermilk Potato Cakes

2 lbs. left-over mashed potatos
1/2 cup buttermilk
2 oz. Ranch dressing mix (powdered)
3 eggs (beat well)
4 green onions (chopped)
4 tbsp. butter
Recipe
In mixer, combine potato, buttermilk, Ranch dressing mix, eggs and green onions. Mix well. Pat into 8 cakes. Cover with bread crumbs. Heat butter over medium heat in saute pan. Cook potato cakes until golden brown - approximately 5 minutes per side. Serve with sour cream and additional green onion if desired.
