Servings 10-12
1 pound lean ground beef
1 large onion, chopped
1 teaspoon seasoned salt
1/2 teaspoon ground cumin
2 cans (1 lb each) refried beans
1 package (1-1/4 oz) taco seasoning mix
2 cups grated Monterey Jack cheese
1 can (4 oz) chopped green chiles
1 cup grated Cheddar cheese
3/4 cup chunky taco sauce
1 box (4 oz) taco shells, heated, then broken into medium-sized pieces
Garnish with the following:
1 cup sliced California ripe olives
1 cup guacamole
1/2 cup sour cream
1/4 cup chopped green onions
Recipe
Brown meat and onion; drain well and add seasoned salt and cumin. Combine beans, taco seasoning mix and Monterey Jack cheese; mix well. Spread beans in a shallow baking dish. Cover with meat mixture. Sprinkle chiles over meat; top with Cheddar cheese. Pour taco sauce over cheese. Bake, uncovered, in a 400 F. oven 20 to 25 minutes or until thoroughly heated. Tuck shell pieces around edge of platter and garnish as suggested.
