1/2 c. sauerkraut rinsed and drained
1/2 c. shredded Swiss cheese
8 crackers or 2 tbsp. rye cracker crumbs
6 oz corned beef chopped small
4 tbsp. thousand island dressing
18 to 20 large fresh mushroomsRecipe
In a bowl, combine all ingredients (except mushrooms), wash mushrooms and remove stems, fill mushrooms with reuben mixture, place mushrooms in a shallow foil pan, put in a little water to cover the bottom of pan bake 350� for 15 to 20 min. Serve hot.
Option:
Grated Swiss cheese or parmesan cheese can be put on top of the mushroom before baking for a little extra flavor.
