Saga and Crabmeat Fritters

List of Ingredients
6 large eggs, separated
1/2 cup milk
1 cup flour
4 ounces Saga cheese, crumbled
1 pound fresh crabmeat
2 cups corn or peanut oil
Recipe
1. Put egg yolks and milk in mixing bowl. Whisk until smooth. Whisk in flour.
2. Use electric mixer to whip egg whites to soft peaks. Gently fold into egg yolk mixture. Stir in cheese and crabmeat. Refrigerate mixture until chilled.
3. Use 2 spoons to shape crabmeat mixture into oval-like shapes. Deep fry in oil until golden brown. Drain on paper towels.
4. To serve, serve hot with Spicy Remoulade Sauce.
Spicy Remoulade Sauce:
1 cup mayonnaise
1/4 cup prepared mustard
1/2 cup finely chopped celery
1/3 cup finely chopped green onion
2 tbsp. finely chopped parsley
1/4 cup horseradish
2 tbsp. lemon juice
1/2 cup catsup
1 tbsp. Worcestershire sauce
1/2 tsp. dry mustard
2 tbsp. white vinegar
3 dashes Tabasco sauce
1 tsp. finely chopped garlic
1 tsp. paprika
2 tbsp. chopped anchovies
1. One hour before serving put all the ingredients in a medium mixing bowl. Mix well to combine. Refrigerate until ready to serve.
